Travel to Sicily with Executive Chef Francesco DiCaudo of Ferraro’s Italian Restaurant & Wine Bar. It’s his home region, as well as the next stop on Ferraro’s season-long tour through Italy with its 2018 Summer Regional Menu Series. All summer, Ferraro’s is offering a changing rotation of prix-fixe menus inspired by Italy’s most renowned culinary regions; Sicily’s menu will be featured from July 13 – July 26. Each Summer Regional Menu is priced at $49 per person and select bottles of wine, chosen by Ferraro’s sommelier to complement the featured menu, are offered at special values as well.

DiCaudo was born near Mt. Aetna in Sicily, where he began working in kitchens when he was just 14. Internships would eventually bring him to hone his skills in Rome, Italy and Paris, France. In 2003, he met Chef Gianpaolo Belloni and immediately recognized his talent and brought him from Italy to Las Vegas. His career has taken him to the finest Italian restaurant kitchens in Las Vegas—restaurants at Bellagio, Wynn Las Vegas and The Venetian. He became executive chef at Ferraro’s in 2015 and, in 2017, was named “Las Vegas Chef of the Year” by Desert Companion magazine.

Traditional Sicilian ingredients featured in DiCaudo’s menu include eggplant, fresh tuna, swordfish, citrus and pistachios, while typical dishes include both the appetizer selection of caponata and sweet brioche-style dessert bread served with Sicilian granita.
